When asked about their choice of Mexican cuisine, Rico emphasized the strong influence of his partners' heritage. Their family recipes and extensive experience in the food industry, including a previous market and restaurant, laid a solid foundation for SoHo Tacos' authentic flavors. He even shared a fun anecdote about a one-time, unofficial fusion creation at a Filipino wedding hosted at their headquarters: crispy pork sisig on tortillas with Mexican salsa.
